Broccoli sprouts are the young, 3–5-day-old shoots of the broccoli plant, featuring tender stems and a peppery, slightly earthy flavor.

Broccoli sprouts first gained mainstream attention in the health world in the 1990s after researchers highlighted their unusually high levels of the compound glucoraphanin, which converts into the potent phytonutrient sulforaphane.  This discovery sparked widespread interest among nutritionists and health-conscious consumers, leading to temporary shortages of broccoli sprout seeds due to surging demand.  Although sprouts and microgreens have been eaten — and grown at home — for centuries as nutrient-rich foods, broccoli sprouts specifically became emblematic of the modern “superfood” movement in the late 20th century thanks to media coverage and scientific research. Today they are grown around the world both commercially and in home sprouting jars as a quick, flavorful way to add nutrients to meals.
